Real Ultimate Power!!

One of the presents given to me was an electric mixer. Hell yes. So, anxious to bust it out and put it to use, I decided to create one of my favorite things to make: cheesecake! I had to go out and buy a springform pan though

Whatsisname's Strawberry Cheesecake

Crust:
  • 3/2 Cup Graham Cracker Crumbs
  • 3 Tbsp Butter, melted
  • 3 Tbsp Sugar
Filling:
  • 20 oz Cream Cheese - let it thaw a bit
  • 1 Cup Sugar
  • 1 tbsp grated lemon peel
  • 1 teaspoon vanilla
  • 3 Eggs
Glaze:
  • 1 Cup strawberries
  • Sugar
  • Cornstarch
  • 1/3 cup water

I normally don't use glazes when I make cheesecake, so I decided I'd do something different. I left out the amount of sugar because I added it until I liked it, I probably used about a cup or so. Anyways:

1st heat up the oven to 350F

Combine the crumbs and sugar until well mixed, then add the butter. Get it nice and mixed, then pack it by hand into the bottom of the greased springform pan. Bake at 350 for about 10 minutes, the crust should be pretty hard by then. Take it out and let it cool.

Turn the oven down to 300.

To make the glaze: Blend the sugar and cornstarch, then stir in the water and strawberrys. Constantly stir in a small saucepan while it cooks, until it thickens and boils. After it does that, give it about a minute, still stirring, then take it off the heat. Let it cool completely before putting it on top of the cake.

To make the filling, beat the cream cheese in a big bowl to loosen it up. Gradually add the sugar, beating it until it gets nice and fluffy. Next add the lemon peel and vanilla. Next beat in the eggs on at a time, being sure they are mixed thourougly. Then, I started adding little bits of strawberry juice until the filling had a nice pink color. Once thats done, pour the fill into the shell. Next I added a little bit of the glaze on top, then poked it around and gently swirled it to give red swirly patterns, makes it look nice. Bake it for about an hour until the center is firm. Take the cake from the oven and let it cool about an hour or so, then add the cooled glaze. Let the whole thing chill in the fridge overnight, and you should be good to go!
