Just in time for the hollidays, here's my super secret recipe. My family has mandated that I make this EVERY holliday gathering.
Ceejamon’s Hella Tasty Cheesecake What you need for the crust: One row of a bag of regular Oreo cookies (NOT Double Stuft) 4-5 tablespoons melted butter What you need for the filling: 2 1/2 pounds cream cheese, room temperature 1 3/4 cups sugar 3 tablespoons flour 1/4 teaspoon salt 2 yolks 5 eggs 1 teaspoon vanilla 1 cup sour cream (3/4 cup and 1/4 cup) 12 ounces white chocolate, melted and slightly cooled Get to making it: Preheat oven to 450 degrees F. Grease a 10-inch spring form pan. Crush the Oreos (doing it in a freezer bag is easiest). Blend the cookie crumbs with the melted butter, press it into the bottom of the pan, and chill. Make sure the whole bottom of the pan is covered. In a mixer with a whisk attachment, place the softened cream cheese and whip it. Add the sugar and continue to mix until blended. Add the flour and salt and blend. Add the yolks and eggs gradually, scraping in between then add the vanilla. Add 3/4 cup of the sour cream and mix in. In a small bowl, whisk the remaining 1/4 cup sour cream with the cooled melted white chocolate, then marble it into the filling. Bake at 450 degrees for 15 minutes, then turn the oven down to 250 degrees and bake for 1 more hour. Then, turn the oven off and let it cool in the oven 1 hour. The cake will still shimmy, but it is done, it will set up as it chills. Refrigerate the cake overnight. Remove from the spring form pan, slice with a hot, dry knife, and serve. VARIATIONS: ---------------------------------- Sometimes I make a topping, like raspberry or something. For raspberry, just heat up some good quality raspberry jam on the stove and after it's thin, drizzle it on top of the cake. Toss on some fresh raspberries if you want, too. Also, try seedless blackberry jam for something a little "different" ---------------------------------- One year I couldn't find the right size springform pan (I was in the process of moving) so I used two smaller pans. In one, I added several spoonfuls of peanutbutter and some milk chocolate shavings to the filling before I put it into the crust. It changed the consistancy quite a bit, but if you like PB it's awesome. ---------------------------------- I hope you guys like it. Stay tuned for more recipes. When you say 2 yolks and 5 eggs is that just 2 yolks from eggs and 5 additonal eggs?

Eggs are cheap. I made this cheesecake just a few days ago for our Thanksgiving feast, and DAMN I should have taken a picture of it. It turned out PERFECT, no cracks at all. I drizzled the raspberry on top, added a few fresh raspberries, and some milk chocolate shavings. It disappeared pretty quick.
