oleo's Rustic Tomato Sauce (pics)

tired of eating puréed baby food tomato sauce? try this...

YOU NEED:
olive oil
yellow onion
garlic
carrot
thyme
1 can crushed tomatoes
2 roma tomatoes
fresh basil leaves
salt

1. saute chopped onion and pieces of garlic in olive oil until light brown

2. shred about a cup worth of carrot

3. put in some thyme and the carrot shreds

4. throw in some salt to get the water out, mix, and cook for a few minutes

5. pour in your crushed canned tomatoes, stir

6. grab some whole roma tomatoes and cut them up

7. put them in and mix

8. cut up one basil leaf and throw it in, mix

9. cover and let simmer for 45-60min (low heat!!! so it' gets the water out and it will be thick!!!) then add a few whole pieces of basil leaves and stir in

10. BAM noodles

11. BAM sauce on the noodles

12. SHA-BAM some sauted chicken on that sauce!

13. TING-TONG-SHLONG-WAH-BAM add some more sauce!

14. parmesan and basil, enjoy

some people put sugar in their sauces

but here you get a natural sweetness from the tomato, carrot and onion,
you can adjust that to your liking with the thyme, basil and some red cayenne pepper

Meat should be expensive, it is only cheap because of giant factory farms. I'm not extremely picky when it comes to sourcing meat, but I tend to buy organic/locally raised chicken which will cost upwards of 6/lb for an entire chicken.

Adding too much sugar can make it taste odd, but generally you only add a very small amount to bring out the natural sweetness of the tomatoes.

My tomato sauce recipes posted here include a lot of sugar, but I now just use a small amount. I started buying better canned tomatoes and it makes a big difference.

7 boneless skinless chicken breasts would cost me $20+ from any grocery store.

I don't buy the pre-packaged frozen ones, but I'm sure theyre a bit cheaper

That's how much chicken breasts cost me as well. it's about $8 bucks for 3 decent sized breasts.
