Thanksgiving "voodoo turkey"


Hope everyone is having a great holiday.

Just thought I'd share one of my favorite turkey roasting tricks with you. "Voodoo Turkey" that I was talking about in the other thread .... coined by a friend several years ago because of it's appearance.

Some tasty stuff right here. As an indication of how well it turned out, my brother-in-law who "doesn't really care for turkey" asked for thirds.

Always use a thermometer. The thermostat in most ovens are crap. Mine is about 15-20 degrees high when set to 325F.



Here it is fresh from the oven :



We only did a breast because the big family gig is set for Saturday.

In case you are wondering .... I stick whole garlic cloves on tooth picks and shove them in far as possible. The toothpicks act as a wick allowing the sweet garlic juice to penetrate deeply into the meat.

Some herbs, spices & butter were placed under the skin as well. Fresh herbs from the garden include : sage, marjoram, rosemary, and a touch of mint. As well as salt and pepper. The pan gravy turned out incredible with all the herbs & garlic.

Oooh that sound fantastic. I certainly enjoyed my classic turkey today but I'd love to try that sometime...

Give it a try, it's pretty easy. Same methods work for chicken breasts too.

Normally I use WAY more garlic cloves but didn't want to blow anyone out.
