oleo's Coconut Curry (Portugese) Chicken with Vegetables (pics)

I'm planning on making this later today, just wanted to see who all might be interested.

YOU NEED:
Chicken - thighs or breasts, I use organic
1 yellow onion - cut into pedals
1 carrot - I use organic, taste is better
1 cup mushrooms - I use brown crimini
2-3 cloves of garlic - minced and cooked with chicken
Lee Kum Kee Coconut Flavored Curry Sauce - found @ your local grocery

For the love of god, wash your vegetables.
-Cut your onions into peels
-Cut mushroom and carrot up
-Get out your curry paste



Here's what it looks like. It's common and you can usually find it in your international section of the grocery store or your asian grocery store.



Mince some garlic and get your chicken out. WASH your chicken also.

Cut the chicken up and put it in a hot pan with the garlic and some olive oil. HOT PAN.



Do not cook all the way. Whiten the sides and leave a little to be cooked later. Remove from the pan and set aside.



Throw your carrot and onion in the pan. It's ok if there is some garlic left over in there. Cook it.

Don't cook them all the way. When they start to wilt, add the mushroom. If you cook them together, the mushroom with cook first and overcook while the others arent cooked all the way. So add the mushroom, NOW.



Mmmm Starting to look good.



Put your chicken back in.

Get out your curry paste and put in 2-3 snoop fulls.



Mix up.



Cover and LOWER THE HEAT FOR SIMMER. We need to thicken this sauce up. Simmer for 10-15min.

looks pretty good.. i'm sure you could substitute soy sauce for the curry if you wanted to... and make a similar stir fry.. thanks for the idea!

i actually made something similar last night. But no mushrooms and i used curry paste and coconut milk.

If you can find a good curry paste in the states, i suggest you people buy it cause making curry is easy as hell, and it impresses the hell out of people who don't know how to make a good curry

I don't see the need to half cook the chicken, but the rest seems nice. I would also look for a way to make the sauce, it seems weird to be suggesting organic and fresh and then use sauce from a jar. I would definitely use 2-3 snoops full though!
