The Cilantro and Lime Thread

Tried two "For The Love Of Cooking" recipes tonight. They were pretty good. I think I was expecting more flavor out of them.

Cilantro and Lime Chicken Breasts

* 2 skinless and boneless chicken breasts, trimmed of any fat
* 2 tbsp olive oil (divided)
* Zest and juice of 1 lime (reserve the juice for the last 15 minutes of marinating)
* 1 tbsp fresh cilantro, chopped
* Sea salt and fresh cracked pepper to taste
* 1 clove of garlic, minced


Place trimmed chicken breast in a large zip lock bag. Pound the chicken breasts flat with a mallet until 1/2 inch thick. Add 1 tablespoon of olive oil, lime zest, cilantro, salt, pepper and garlic. Mix thoroughly and marinate in the refrigerator for 4-6 hours.

Remove chicken from the refrigerator 15 minutes prior to cooking and add the lime juice to the marinade, mix thoroughly.

I grilled mine. She cooked hers in a skillet.






Cilantro and Lime Rice

* 1-2 tsp olive oil
* 1/4 sweet yellow onion, diced
* 1-2 cloves of garlic, minced
* 1 cup long grained rice (brown or white)
* 2 cups of water
* 1 tsp chicken bouillon granules
* 1 large handful of cilantro, chopped
* Juice and zest of 1 lime

Heat the oil in a pan over medium heat. Add the onion and sauté for 5-7 minutes, until soft and tender. Add the rice and garlic then cook, stirring constantly, for 1-2 minutes. Add the water and chicken bouillon granules, bring to a boil over high heat, cover and reduce the heat and simmer, until tender, about 20-25 minutes for white rice and 40-45 minutes for brown rice. Remove from heat and mix with the cilantro, lime juice and zest. Enjoy.






Here they are! It might seem like it would be too much lime and cilantro but it wasn't. I bet corn on the cob would have been nice with this dinner. Fuck. I should have made corn.

In time. I have chicken, that is thawing. However, I lack cilantro until i go shopping tomorrow.

Grate your limes with the smallest rasp possible, be forewarned, this will make your kitchen smell absolutely wonderful for about half an hour. Avoid at all costs if you hate wonderful.

All pounded and flat.

Limes 15 minutes from the end? PSHAW. LIMES NOW. No such thing as too much limey flavor

Marinade all mixed up and ready to go

Bag chicken and marinade, wait a while. Im going to give it a good 24 hours for flavor absorption.

Awesome! Everything looks so neatly done. I will probably make more of a mess when I try this. I see you like extra lime flavor, too.

Oops, too late. I really need to start doing that, though. First I need to get a pounder or mallet or whatever the technical name is.

Now to wait and see the end results, which I'm sure will be scrumptious.
